Linguine with Avocado, Tomato & Lime recipe

LINGUINE WITH AVOCADO, TOMATO & LIME

A simple, fresh, and flavorful dish that’s perfect for any day of the week.


INGREDIENTS

  • 250g linguine
  • 1 ripe avocado, diced
  • 200g cherry tomatoes, halved
  • 1 clove garlic, minced
  • 1 lime, zested and juiced
  • 2 tbsp olive oil
  • ¼ tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh basil or cilantro, for garnish
  • 2 tbsp grated Parmesan (optional)

INSTRUCTIONS

  1. Cook the Pasta

    • Boil linguine according to package instructions until al dente.
    • Reserve ½ cup of pasta water, then drain.
  2. Prepare the Sauce

    • In a bowl, combine diced avocado, halved cherry tomatoes, minced garlic, lime zest, lime juice, olive oil, red pepper flakes (if using), salt, and pepper.
  3. Combine Everything

    • Toss the cooked pasta with the avocado mixture.
    • Add reserved pasta water as needed to coat the pasta evenly.
  4. Final Touches

    • Garnish with fresh basil or cilantro.
    • Sprinkle with Parmesan if you like.
  5. Serve & Enjoy! 🍝
